A non-dairy healthy alternative to whipped cream. This can be used anywhere whipped cream is needed. My kids just love dipping their strawberries in it.
What you need:
- 2 cans organic coconut cream
- 3 tbsp powdered sugar
- 1-2 inches vanilla bean (optional)
The how to:
- 2 cans of organic coconut cream. I like to chill them in the fridge overnight, being sure not to shake the can. The reasoning is to encourage the cream to separate from the liquid.
- Remove the coconut cream or milk from the fridge without tipping or shaking the can. Remove the lid. Scrape out the thick stuff at the top of the can, leaving the liquid at the bottom. I like to save the liquid and use it in my smoothies.
- Put all ingredients into a bowl and whip with a beater until you get a soft peak. About a minute. Taste and add more sugar to desired sweetness.
- Serve and devour.
