A beautiful gloomy Sunday afternoon. Sorry it has taken me so long to get this post up, I was in Las Vegas last week and it has taken me the entire week to get caught up with all of my "Mommy" duties lol. Well not all, I honestly don't think that day will ever come, but as close to all as I can for now hehe. As soon as I'm done writing this post I will be heading outside to join my pod to plant our garden. I'm soooo excited about this. Something about watching food that I planted grow, just brings a sense of peace to my soul. As a young girl, I dreamt about doing these things with my children and here I am today doing them. I feel soo blessed. Lately the topic "everything happens for a reason" has been coming up in my life in many different ways, so I thought I could share my thoughts with you guys, I'd love to hear what you think. I'm finally at a point in my life where I believe this with all my heart. I've had a few detours in my life and I, for not one second, would change a thing. I feel so grateful to have went through them. I'm very humbled and proud of the person I have become and am becoming. I recently saw an interview with the amazing Tony Robbins and in it he explained, how success is taking the worst day in your life and making it your best day. Know that its a choice, there is something good that can come out of anything. This is a skill I will be trying to perfect for ever, constantly reminding myself that it's in the hard times of your life that greatness is manifested. You can either choose to allow those times to hold you back or you can choose to make them your greatest growing experiences. I know, from personal experience, that there has been a few times in my life that I couldn't make sense of why it was happening. I lost my faith. But I look at them now and I see every reason why it has happened. With every experience comes the choice of how you allow that experience to shape you. For the good or the bad. I choose good. So, on that completely irrelevant note, it's Avocado Salsa time!
What you need:
- 3 Ripe Avocados - Diced
- 2 Tomatoes - Diced (I prefer Roma)
- 1/4 Small Red Onion - Diced
- 2 Cloves Garlic - Crushed or Minced
- 1 Small Yellow or Orange Pepper - Diced
- 1-2 tbsp Cilantro - Minced
- 1 tsp Fresh Lime Juice
- 1/2 tsp Ground Cumin
- 1/4 tsp Cayenne Pepper
- Salt and Pepper to taste
- 1/2 Small Jalapeno - Diced (optional)
The how too:
- Add all ingredients to the bowl and mix. Serve with chips or add to any sandwich. Any left overs, put in air tight container and press plastic wrap to avoid browning.
