Classic coleslaw with a healthy twist. Classic coleslaw dressing is filled with an unnecessary amount of unhealthy fats. Aren't salads suppose be your healthy option. Little do people realize how unhealthy your salad dressing can be. So here my version that puts a stop to that.
What you need:
- 1 small head of green cabbage shredded
- 2-3 carrots grated
- 1/4 head of purple cabbage for colour (optional)
- 1 ripe avocado
- 1 heaping tbsp of vegan sour cream
- 2 tbsp coconut sugar
- 2 tsp dry mustard
- 1 1/2 tsp celery salt
- 1 tsp onion powder
- 1 tbsp vinegar to thin dressing
- salt and pepper to taste
The how to:
- Shred green and purple cabbages, and grate carrots put in bowl set aside.
- Dressing: add avocado, sour cream, coconut sugar, dry mustard, celery salt, onion powder and vinegar to separate bowl and mash together with fork, season with salt and pepper to taste.
- Pour dressing on top of salad toss and serve.
